Vegan & Gluten Free Avocado Hummus

OPAL Nutrients loves this super simple yet delicious avocado hummus. This recipe is filled with healthy fat, protein and dietary fiber. A great party recipe and kid friendly.

 

Ingredients: 

2 ripe avocados, peeled and seeded
1 can of chickpeas, rinsed and drained
1 large cloves garlic, minced
1 Tbsp. fresh lemon juice
2 Tbsp. avocado oil
a dash salt

** To add nutritional benefits, add turmeric to the recipe. Most won’t taste it and the health benefits are fantastic. **

Instructions:

  1. Dice half the avocado and set aside.
  2. Place the remaining avocado, chickpeas, garlic, lemon juice and oil in a blender. Blend until smooth. Upon tasting add salt as desired.
  3. Gently stir diced avocado into hummus mixture.
  4. Drizzle with avocado oil
